We had this meal for supper tonight and today was a very long day.  I suspect that I’ll be much faster at making it next time but it was relatively easy to prepare and most of the items I have on hand on your average day so it works out well.  I did catch myself short though – I forgot to buy kale at the grocery store yesterday so I used spinach instead (the chopped frozen kind) and it turned out just fine.

You’ll notice that this blog may have lost a bit of it’s focus.  I started this blog to be held accountable to something beyond just me – all of you!  It was my goal to bring some healthier habits into my family’s day to day lives.  Perhaps with some help, encouragement and ideas from you guys.  Well, recently I’ve been looking at what I’ve accomplished thus far.  Let’s see, I ran a few times for a couple weeks (I really would like to get out and run again – I’m trying to remember what it is that is stopping me but I’m sure it’s a good excuse reason.), I am inline skating at least once a week with some other moms and I eat at least one ‘Clean’ meal a week.

I suppose it’s a start, but I think I’ve gone a bit beyond baby steps.  What is smaller on the ‘baby steps’ scale?  Ant steps?  A while ago I wrote that though I had fallen, I was going to get back up.  Well, I’m still waiting to get myself off my arse!  I have been losing and regaining the same three freakin’ pounds for weeks!  I’m even a little embarrassed to admit that I Read the rest of this entry »

I LOVE brunch!  I love it so much that when my husband and I got married, we had a morning wedding so we could serve brunch for our meal at an afternoon reception.  Yeah, yeah, there were other contributing factors, but it does not diminish my love of brunch!  I think it’s the flexibility of it that I like.

This Sunday we invited a couple over.  It was my friend’s birthday a few weeks ago and I didn’t get to see her so this is her celebration brunch.  I had a tough time coming up with something to make though.  She doesn’t like eggs. Or tomatoes.  So, eggs cooked in tomato cups was off the menu – but just as an fyi, they are delish.  I needed to come up with something easy and not too heavy since I baked her a Peanut Butter Chocolate Cake for dessert – and it is rich!  Stuffed French Toast was a serious contender, since that’s one of her favorites, but the meal had to be uber easy since mornings can be pretty crazy around here at the best of times, let alone when we have to prepare for company too.

Clean Eating 1Sorry – no picture of my own finished product this time.  But check out the cover of the March/April 2010 issue of Clean Eating and it looked just like that!

It was all rush rush rush tonight and we ate dinner in shifts.  It didn’t take too long to throw together at all – which is great!  Even better, my son enjoyed washing the veggies for med – which is ok by me since it tends to be ‘two for the pot, one for him’.  It’s a win win situation.  For the second week in a row, I had all of the ingredients on hand AND this time I don’t even have any substitutions to list either!  Look at me go!

Ingredients:

Tomorrow is Thursday.  The day that someone comes to clean the house – because heaven knows I don’t do it.  But that’s beside the point.  The point is, tomorrow, she comes to clean the house.

I love my husband dearly … and there it is.  The audible ‘… but …’

Please, somebody, ANYBODY, tell me why I come home from running errands this evening to find my husband scrubbing the effin’ stove!???  Why do we hire someone to come in and help us with this stuff, then clean it all to a shine the night before she arrives!?!??!   I DO NOT GET IT.

Now, here is my favorite part.  He’s PISSY about it!  He is mad that he has been left to clean the stove off.  While I was out running his errands!  Let’s be clear here, I was not off getting a mani & a pedi or having drinks with the girls.  I was buying much needed shoes for my son (since his only pair that fit is broken) and buying cedar mulch for my husband.  Can someone please explain this to me?  You should have seen the look that I got when I asked him why he was cleaning off the stove top the night before we were to have the house cleaned by pro.  “Well, we can’t have her see it like this!”, he growled at me.  HUH?  It’s not like I had cooked egg on it or anything … there were some bread crumbs, I can admit it, but  seriously?

Mmmm …yum!  So yummy, in fact, that I started eating before I snapped a picture!

What a great way to start Sunday – a pancake breakfast and I didn’t have to cook!  I made up the recipe, inspired by a couple recipes from Food Magazine’s recent ‘50 Pancakes & Waffles‘ insert, as my husband frantically searched for ingredients and threw it all together.  Does it get any better?  He even made a delish fruit smoothie that my son gobbled up so quickly that he got brain freeze!  Poor kid, he had no idea what hit him!

I have to admit, I’m not exactly sure what puts the ‘Island’ in these Island Paradise Bean Burgers but I was really curious to see how these would turn out as I’ve never even had a veggie burger before!

Hopefully I’ll impress you when I say, I actually had all of the ingredients on hand this time!!  The only situation I had this time around was the beans.  I had beans in my cupboard, sure, but it was a bag of dry beans.  I have a confession: I’ve never cooked dry beans before!  I know, it’s killing you – you want to ask, why, then, did I have a bag of dried beans?  Even more odd, I also have a bag of white beans in my cupboard.  Uh huh.  Yup.  Makes all kinds of sense, doesn’t it?

I am trying to get myself into the habit of eating healthier.  Apparently I am not trying hard enough since I have been losing and gaining the same 3 lbs for weeks!!  Now, eating healthier, for me, means, being aware of the amount of food ‘crap’ I consume in a day ‘when no one is looking’.  It means no more mindless munching in front of the TV after the kids go to bed at night.  It means no more snack sneaking during their naps.

To be clear, and this is a little embarrassing to admit but, I’m not talking about ‘a’ snack.  I don’t usually eat ‘just one’.  I’m one of those people, if I open a bag of chips, I’m in trouble because the Lays’ tag line is true, even if it isn’t Lays inside that bag/box/container.  And, sometimes, I do follow the insane philosophy of an old friend of mine that says, well, if I’m going to eat some crap, I might as well eat it all, otherwise it’ll just tempt me later.
